Description:
Tarragon is an aromatic perennial herb, belonging to the Compositae (Asteraceae) family. It has a root that is long and fibrous and spreading by runners. Its stems are numerous, which are bushily branched with flowering branches at the top. The leaves are long and narrow, and it has small clusters of flowers that are white, and later reddish.

Culinary Uses:
Tarragon adds A sweet, fresh, licorice like flavor to dishes. It is widely used in European and French cooking for a variety of dishes including chicken, fish and vegetables, as well as many sauces. It's also an integral ingredient in Fines Herbes. Tarragon is commonly known as a spice that is added to vinegar and is used in pickles, relishes, and prepared mustards.

Medicinal Uses:
Tarragon improves digestion and stimulates the kidneys and uterus. It is effective as an oral anesthetic, which can numb the mouth and relieve toothache.
