Rainbow Peppercorns is a blend of four colors of peppercorns. It is a mix of black, white, green, and pink peppercorns. The black, white, and green peppercorns are from the Piper plant while the pink peppercorn is the fruit of a plant in a different family, Black Peppercorns, are the dried unripe berry Piper plant, with a stronger flavor. White Peppercorns, are the fully ripened berry Piper plant, with the less pungent flavor. Green Peppercorns, are the preserved underripe berry Piper plant, that is the mildest flavor of all. Pink Peppercorns, are the fully ripened berry of the California Pepper Tree, with an aromatic and somewhat sweet flavor.
