Description:
Brown Mustard, known as Black Mustard, is the seed of the Sinapis Nigta Mustard Plant. It is an annual, herbaceous plant, belonging to the Cruciferae (Brassicaceae) family. It is an erect plant, with a thin root producing a grooved and branched stem with spear-shaped leaves and medium sized, yellow flowers. The fruit is an erect flattened pod with a short slender beak, divided into two chambers. Each chamber contains five to six dark reddish-brown seeds. Brown Mustard has a more robust flavor than the Yellow Mustard.

Culinary Uses:
Whole Mustard seeds can be ground for a pungent fresh mustard powder. Home ground Mustard powder should be prepared a half an hour before serving, for the Mustard oil to achieve its full body. Mustard Seeds can be used in pungent sauces, curries, dips, sandwich spreads, salad dressings and cheese dishes. Whole Brown Mustard Seeds are an important flavoring in Indian dishes. Whole Mustard seeds are used for pickling, flavoring cooked meats, or in boiling vegetables such as cabbage or sauerkraut.

Medicinal Uses:
Mustards are still used today in mustard plasters to treat rheumatism, arthritis, chest congestion, aching back, and sore muscles. Taken internally the seeds are laxative, mainly because of the mucilage they produce, but small doses only are advised, as they may inflame the stomach.

Precautions and Adverse Reactions:
As a mustard plaster produces sufficient heat to burn the skin, it must be removed after 15 minutes.
