Description:
Lemon Balm is a spreading perennial herb belonging to the Labiateae (Lamiaceae) family. It has a short rootstock, square branching where and at each joint pairs of bright green heart shaped leaves, and tiny yellowish-white flowersin small bunches from the axils of the leaves. Both the leaves and flowers give off a strong lemony smell when crushed. Lemon Balm is frequently used as one of the ingredients of potpourri and is also an excellent ingredient in dream pillows.

Culinary Uses:
Lemon Balm can be substituted for many of the uses of lemon thyme. It can be added to fish and poultry dishes, marinades, pesto, salads, jellies, and can be used as a garnish. It can also be used in vinegars, liqueurs and cordials. A sprig of Lemon Balm added to a glass of drinking water will give it a lemony lift.
To make a tea, pour 1 cup boiling water over 2 teaspoon of Lemon Balm Leaf, cover and steep 3-5 minutes.

Medicinal Uses:
Lemon Balm is for treating headaches, colds, and nervous or upset stomachs. Externally, crushed Lemon Balm can be applied to wounds and insect bites to help speed healing.
