Description:
Lecithin and its primary component, choline, are extracted from soybeans, belonging to the Leguminosae (Fabaceae) family. The soybeans are kept at consistent temperature and moisture level for seven to ten days. This hydrates the soybeans, loosening them from their hulls. The soybeans are then cleaned and separated from the hulls and are heated and pressed into flakes. The flakes undergo a distillation process where the soybean oil is extracted. Next, the crude soybean oil is made to undergo a de-gumming procedure that creates a sludge. The sludge that is produced as a result is where soy lecithin comes from.
