Description:
Fennel is a perennial herbaceous plant, belonging to the Umbelliferae (Apiaceae) family. It is a umbelliferous herb, with a thick and spindle-shaped taproot, fluted round stem, finely divided feathery leaves, and yellow flowers. The fruits are dry and composed of two separate segments (called mericarps), each of which contains a fragrant and distinctive seed. Fennel is rich in vitamin A and contains a fair amount of calcium, phosphorus and potassium.

Culinary Uses:
Fennel goes well with fish and is used in Italian sausages and some curry powder mixes. It can be used with meats, fish, vegetables, tomato sauce, stews, soups, meat balls, spaghetti, salad dressings, sweet pickles, sauerkraut, breads, cookies, cakes, pie fillings, teas, and liqueurs. Fennel Seed can also be sprouted and added to salads or sandwiches. Chewing the seeds after a meal will freshen the breath.
To make a tea, crush 1 tablespoon of Fennel Seeds, and add to 2 cups of boiling water. Reduce temperature, and simmer gently for 5 to 10 minutes.

Medicinal Uses:
Fennel helps to take away the appetite. It helps detoxify and remove waste material from the body and helps to improve digestion It can be helpful with coughs. Fennel also enriches and increases the flow of milk for lactating women. It also relieves colic and gas, and abdominal cramps.
