Culinary Uses: The Chicory Root is roasted, which sweetens it, and then used as a coffee substitute or extender, as in Louisiana-style coffee. Roasted Chicory Root can used in a coffee grinder to produce a finer material. It can be brewed right in your home coffeemaker. Simply use two to three tablespoons of ground Roasted Chicory Root for each cup desired. A tea-ball, filled with one and one-half teaspoons of ground Roasted Chicory Root will produce about 4 cups of drink. Roasted Chicory Root can also be used to add a dark rich color to soups, meats, gravies and dark breads.
Medicinal Uses: Chicory is often recommended for jaundice and or spleen problems. Chicory has been used to treat loss of appetite, liver and gallbladder problems, and intestinal worms, and as a treatment for gallstones, cuts and bruises. It is a mild laxative. Chicory is helpful for diabetics, since it contains inulin, a natural starch. It also promotes bile secretions and aids in the elimination of mucus and gallstones.
