Culinary Uses: To make a tea, pour 1 cup boiling water over 1 teaspoon of Chicory Root, cover and steep 3-5 minutes.
Medicinal Uses: Chicory is often recommended for jaundice and or spleen problems. Chicory has been used to treat loss of appetite, liver and gallbladder problems, and intestinal worms, and as a treatment for gallstones, cuts and bruises. It is a mild laxative. Chicory is helpful for diabetics, since it contains inulin, a natural starch. It also promotes bile secretions and aids in the elimination of mucus and gallstones.
