It is a tree with wood of a pinkish hue, shiny dark green leaves and small red flowers followed by long, thick flat pods that are a shiny dark brown-purple color. They contain a number of Carob seeds in a line along the center of the pods. Roasted Carob Powder is a great non-caffeine, natural, and nutritious substitute for cocoa or chocolate. The main constituents of Carob seeds are sugars and tannins. It contains 2% fat, B vitamins, calcium, phosphorus, iron, and magnesium. Medium roasted carob powder is roasted for 10-12 minutes at 400 degrees Fahrenheit.
