Description:
Bay Leaves, also called Laurel Leaf or Bay Laurel, are from the Bay Laurel tree, a member of the Lauraceae family. It is a pyramidal, evergreen, broadleaf shrub with leaves that are stiff, spicy, and fragrant. Breaking the leaf of this aromatic herb produces a pungent aroma. The two main varieties of bay leaf are Turkish (oval leaves) and Californian (long narrow leaves). The Turkish bay leaves have a more subtle flavor than do the California variety.

Culinary Uses:
Bay is one of the few herbs that should be added early in cooking as it differs from most herbs in that it does not lose its flavor with long cooking. Bay are used in soups, stews,sauces, pickles, meat and vegetable dishes, bean and grain dishes, and marinades, Bay Leaves should always be removed before food is served.
To make a tea, steep 1 to 2 teaspoons of dried Bay Leaves in 1 cup of boiling water.
