It is colorless, tasteless and can absorb up to 200 times its volume of water to form a gel. Agar is commonly referred to as Chinese gelatin.

Culinary Uses: When dissolved in boiling water and cooled, Agar-Agar powder contains glose and becomes gelatinous. It can be used as a vegetarian gelatin substitute for thickening soups, sauces, jellies and ice cream.
Medicinal Uses: Agar-agar is approximately 80% fiber and shredded Agar can be used as a laxative. It is preferably not given in powder, as it has been known to cause rise to irritation in some cases.
Precautions and Adverse Reactions: Taking this herb without adequate fluid may cause esophageal and/or bowel obstruction.
